Wrapping up the Raw

Ok, so we did strict raw for 10 days!!  I can honestly say I would have cheated at least once everyday without Jimmie.  He has a tough competitive spirit and can not quit anything he starts, which is good for me!!  Anyway, there were moments of hunger, boredom with our options, etc. but honestly we felt great and was worth the few pounds we lost and the new recipes and things I learned about sugar substitutes!  I have always loved baking and since I have been married have come to love cooking in general.  Of course it helps when your awesome husband will help and do the dishes.:)  I am lucky that way.  One magazine I found last year has really been a game changer* for me.  Of all the things I have made there are generally very few things I change and we have only put one thing on the "just ok" list.  All other things have been made more than once!  Check out Clean Eating if you are needing a new batch of recipes.  Here are the things I will be making in February:

Picadillo Chowder(made for my sweet friend Kayle&froze some for us!)
Quinoa Stuffed Peppers
Mini Grilled Cheese Sandwiches
Mediterranean Vegetable, White Bean & Feta Penne
Country-Style Beef Soup & Green Pepper Soup
Chewy Mocha Dream(Gluten-free & only 56 calories!)

All from the February Edition!!  We will see what ends up as keepers.

This is out of an old issue, but when making a meal for Kayle that would be Gluten free I found a cookie that is awesome.  I don't usually go for the hot out of the oven cookies, but this one is best that way!

Almond Butter Cookies










*phrase I must have picked up from Jamie!!

Pudding!! Raw Style

Pudding that all mom's MUST make!!

This pudding is so easy and so tasty!!   I would say, just go ahead and double the recipe.

Chocolate Mousse-by Jennifer Cornbleet
1/4C pitted medjool dates, soaked(about 30 min)
1/4C pure maple syrup or agave nectar
1/2t vanilla extract(optional)
3/4C mashed avocados(about 1& a 1/2)
1/4C plus 2T unsweetened cocoa or carob powder
1/4C water

Place dates, syrup, vanilla in food processor until smooth.  Add avocado and cocoa until creamy.  Might need to stop and scrape the sides a few times.  Add water and process briefly.  Will keep for 3 days or 2 weeks in the freezer.

Raw Update

We have turned a corner.  By the end of day 2 I think we were both feeling unsatisfied and just wanting to eat something crunchy or hot!!  We woke up today though(day 4) and had an awesome cereal and were feeling better and ready to tackle the next 10 days.  There is NO way I could do this without Jimmie.  I have seen how easily I want to quit things!  The only thing we really have changed our mind on was the Chili, was good the first time but just never sounded good after that.  We have however tried two Chocolate Mousse recipes that we love!!  That has been a staple after every meal.  I will post those soon, but one thing that would be easy to try and not too weird is Muesli.  We have no idea what that means or how to say it, but it was great!!
MUESLI
1/2 C rolled oats
2 T raisins
1T chopped raw almonds or walnuts
2 t raw sunflower seeds
2 t agave nectar, raw honey, or whole cane sugar
1/2 C Almond Milk
1/4 C fresh blueberries, strawberries, banana, etc.

Tomorrow we are going to try Spinach Apple Soup.  Aaron recommended this, so I am sure we will like it.
SPINACH APPLE SOUP
2 C spinach leaves, tightly packed
1/2 apple, peeled and chopped
1/2 C water, plus 1/4 C water to thin if needed
1t fresh lemon juice
Dash salt
1/2 ripe avocado, chopped

1)Place spinach, apple, water, lemon juice, and salt in blender and process until smooth.  
2)Add avocado until smooth.
3)Add remaining 1/4 C water to thin if needed and blend briefly.
Serve Immediately

For a side we will have bell peppers with a black bean spread.  Just put the beans in the food processor with a little salt and olive oil.

HAITI

Haiti-A country you can not visit and forget.  We love Haiti for many reasons and did before we ever even went to visit.  Our friends there amaze us and encourage us to lean into the Lord.  They have seem many miracles.  Many were shown this day last year when the earth shook.  Please continue to pray for Haiti and leave an encouraging word for at least one group there loving the beautiful people of Haiti.

Raw Food-Day 1-Con't.

Ok so the raw thing is working, but it is weird.  We feel like we just keep eating and eating and eating!!!  We do feel good though and I am loving all the new recipe ideas!  So here was the rest of our meals today:
LUNCH- by: Jennifer Cornbleet
Not Tuna Pate
1/2C soaked raw sunflower seeds
1/4C soaked raw almonds
2T water
1T fresh lemon juice
1/4T salt
1 1/2T minced celery
1T minced onion
1T minced fresh parsley

Chop the nuts, water, salt, and juice in the food processor.  Stir in remaining ing.


A 5 for the Tuna!  We liked this one and will be making it again!  I used more of the veggies that get stirred in and added carrots.  We ate it on a romaine lettuce leaf with black olives and bell pepper strips.


SNACK- by Christine
Green Smoothie
1 can(20oz) Pineapple w/juice-I like mine out of the fridge
2T ground flax seed
1C almond milk
1 frozen banana
3 frozen strawberries
as much Spinach as will fit!

Blend all of it and then add more spinach until it is a thick green awesome smoothie!

Raw Food-Day 1

The second reason we are trying a raw plan for a couple of weeks was our disgust after watching Supersize Me and the documentary Food Inc. within 24 hours.  I honestly don't recommend this.  It was too disappointing and gross.  I should say that I am not your average go with the flow chicka.  I do not just jump on bandwagons when the popular kid says they want to be Vegetarians(which we will not be).  It even took us this long to watch these two films b/c we didn't want to just hear the hype about our food industry.  For us it took feeling like poo.  We really came out of the holidays bloated, uncomfortable, and just moody and lazy.  I know these are common feeling after the eating fest December, but it made me start questioning if this was how we were supposed to feel or if we were just used to feeling like poo?  These films gave us a lot of doubt in our meat industry.  A lot of doubt about ever buying meat from a grocery store or restaurant again.  I am not one to say never and we realize this would limit our meat intake greatly due to cost alone, but maybe it is worth it?  Living in Austin, we are thankfully given lots of healthy options.  We are the Whole Foods mecca.  We have a huge Farmer's Market that we have access to every week.  We have awesome restaurants like Mr. Natural, P. Terry's, and Mother's trying to do things right.
If we were true rockstars we would probably eat at these places all the time, but in trying to stay with our normal grocery budget we know we could skip the supermarket meat aisle and at least get a few veggies in it's place!  So, onto the menu.  Today we have had Granola with a little bit of Almond Milk.  For lunch we will have Not Tuna Pate and dinner is yet undecided but looking like Chili.
For now: Breakfast-both by Jennifer Cornbleet
Almond Milk:
2 1/2 cups water
1 1/2 cups soaked almonds
3 pitted medjool dates, soaked
1/2 teaspoon vanilla extract, optional

Place items in blender and then strain out the milk!(short version of directions)
This was not difficult at all but did not produce much milk.  Unfortunately this would be one of those things that a family or even us if this were a long term diet could not keep up with financially.  There are things you can do with the ground up almond bits to not have to throw them out, but even then you are just not getting enough milk to justify the cost.  I say this is unfortunate because this would obviously be a more natural option.  I will buy a box of Almond Milk from the store today to compare cost and ingredients.

Granola:
1/4 C. soaked raw almonds
1/4 C. soaked raw sunflower seeds
1/4 C. soaked raw walnuts
4 pitted medjool dates, chopped, unsoaked
1/4 t. ground cinnamon
dash of salt
1/2 C. fresh fruit of choice
1/2 C. Almond Milk

Place nuts and seeds in food processor.  Pulse breifly.  Add dates, cinnamon, and salt and process just enough to mix.  Sore in a sealed container in fridge.  Will keep for 2 days.  Add fruit and milk to your liking.

OK-we decided we would rate the recipes from 1-5.  1 being something we could not finish and 5 being something we will keep around past the two week mark.
The granola gets a 4.  We both finished our bowls and know that we will finish the batch tomorrow, but were both really full of it quick.  I think when we make it again we will use less dates--I LOVE sweet things, but even this was too sweet for me.  I was really impressed overall though.  I usually don't do the nutty, grainy cereal due to texture, but this had good enough flavor that I enjoyed it pretty well.

Eating Raw

Raw Food Bible

Here is to trying new things in the New Year.  We are going on a Raw Food Cleanse for 2 weeks.  14 days.  Yikes.  There are many reasons we are doing this, one which is clean out our system(literally).
We went out of the country the last two weeks of November and then jumped right into the craziness of the Holidays once we got home.  I am pretty sure we ate out more during that time than we did the rest of the year!!  I am a total homebody and prefer my cooking to most anything you can buy out.  Not that I am an amazing cook, I am just picky and like to eat things the way I like to eat them!!  Of course there are times to eat out: date nights, traveling, or in Austin at one of the million Healthy restaurants we have,  but now that all the celebrating is over it is back to eating at home for us!  I will post our menu for the day and our reviews of the meal.  Hopefully there will be plenty of things that we will want to keep in the rotation.

Today I hit up Sprouts and Costco in search for everything on my long list.  They had almost everything I needed and I think with a quick trip to HEB tomorrow, we should be good to go.  Anyone else eat raw often?  Any tips or suggestions?

I have started and quit more than one blog in the past.  Mostly because I thought in order to have a good blog you had to have something witty, cool, or trendsetting to say.  After reading blogs for years(many of which had nothing of that sort to say), I realized there are lots of reasons to have a blog.  Some people truly do have a blog to be funny...that will probably not be me.  When trying to think of a title, my sweet and loving sister came up with: no one gives a crap.com.  hmm....while probably being true, I just needed a little bigger ego boost than that to get this thing going.  So while I can't promise the latest cutting edge news, jokes, or happenings, I will journal what is on my mind and going on in my life and if anyone out there is on the same page...GREAT!!  Welcome to the Ingram Insider.
